En todo Westchester hay más de 50 pastelerías pero ninguna que prepare el tradicional Pastel de Tres Leches como lo hace Doña Cristina Juárez, una mujer natural de Zacatecas, México, quien se ha convertido en la Reina de los Pasteles de Tres Leches en Westchester County.

Doña Cristina llegó hace 14 años a Yonkers, con su esposo Felipe y tres hijos: Felipe, Juan y Sergio. Luego nacería aquí Christian, el menor de la familia. Como ella dice, cargaba su tesoro más preciado: “El Recetario”. El librito de donde salen las ideas para sus maravillas.

Doña Cristina estudió repostería y panadería en la Unidad Cuauhtemoc, Naucalpa, Estado de México. Allá fue donde empezó sus pininos y ya en Nueva York puso en práctica todo lo aprendido. “No era fácil. Porque no sabía el nombre de los productos en inglés”, relata Doña Cristina.

Pero el inglés no fue impedimento y empezó a preparar los pasteles en casa y hasta que el 8 de diciembre de 2005, decidieron en familia, abrir su pastelería en el 301 de South Broadway en Yonkers. El paso hacia la formalización había sido dado.

“En mis inicios conté con personas que me apoyaron mucho, como la familia Bermejo, quienes se encargaron de decirles a otros acerca de mis productos”, señala agradecida.

Así durante más de 10 años su fama fue creciendo en base al pastel que según los datos es originario de Sinaloa, México. “Creo que la gran diferencia es que todos los demás son hechos más comerciales; mientras, el mío es más al estilo casero”.

Pero el ser tan experta preparando los pasteles le ha traído un pequeño problema y es que no se puede despegar ni un segundo del negocio. “Todos quieren que yo misma sea la que los prepare”, sostiene.

Doña Cristina ahora también se dedica a pasarle los secretos de la pastelería a sus hijos. Aunque Sergio parece ser el que ha heredado el talento. “El es un experto en la Gelatina Artística y en decoración de pasteles”, asegura ella.
Doña Cristina es otro ejemplo más de que si se tiene el talento y con deseos de superación todo es posible.

“Como buena mexicana me lance a esta aventura y con la ayuda de Dios creo que seguiremos adelante”, puntualiza.

RECETA TRADICIONAL:


Ingredientes:
5 huevos, separe las claras de las yemas.
1 taza de azúcar
1/3 de leche
1 taza de harina de trigo cernida
2 cucharadas de polvo para hornear
1/2 de cucharada de crema tartara en polvo(si la tiene a la mano)
Prepare su horno a 350 grados. fh

Para hacer el dulce
1 lata de leche evaporada
1 lata de leche condensada
1 taza de crema
1 cucharadita de vainilla
1 cucharada de cogñac o ron

Para hacer el Merengue
1 1/2 taza de azúcar
1/2 cuacharada de crema tartara en polvo
5 claras de huevo

Procedimiento:
Para prepar el pastel bata 3/4 de azúcar con las 5 yemas de huevo cuando tomen un color amarillo claro, agregue 3/4 de leche, 1/2 cucharada de vainilla, el harina, y el polvo para hornear.
Por otro lado bata las 5 claras de huevo, por 2 minutos agregue la 1/2 cucharada de crema tartara, y agregue un 1/4 de taza de azúcar poco a poco y batalas hasta que el merengue este solido.

Agregue el merengue a la pasta que tiene el harina suavemente unicamente envolviendo sin batirla.

Ponga la pasta en un molde rectangular de tamaño mediano, engrasado con mantequilla y pongalo en el horno a 350 grados fh, por 50 minutos checandolo con un palillo de madera y si sale completamente seco esta listo.

Dejelo enfriar por 1 hora y cuando este listo con un palillo de madera agale agujeros por encima en toda la superficie.

Prepare el dulce de leche combinando, la leche evaporada, la condensada y la crema, la vainilla, el cogñac o ron revolviendola bien.

Ponga el dulce por encima del pastel suavemente para que lo absorva y lo que se cae hacia los lados pongaselo por encima.

Bata las 5 claras de huevo con la crema tartara agregando el azúcar poco a poco según el merengue cresca.

Con una espatula pongale al pastel una capa gruesa del merengue.

Para adornarlo con un soplete de soldar portatil se lo pude pasar por todo el rededor para dorar el merengue o lo puede dejar así. metalo al refrigerador por 4 horas o más.
